After driving for about an hour, I turned the car off (seatbelt off, foot on the brake), the infotainment screen was blank and binnacle was white! See attached image of what happened. Has anyone seen this before?

Check your settings in the infotainment to see if you have accidentally set it to bright view instead of dark. It is called something like that in the settings.

I didn't change any settings. It's always dark and only twice it's done this weird thing. After a restart it fixed itself.

I have had the infotainment screen turn black when using the native navigation (not Android Auto Google maps). The binnacle turns white as you show. After 20 or 30 seconds wait, the infotainment reboots on its own, reverts back to the destination screen for navigation, and the binnacle changes back to normal. Were you navigating when this happened?

Yes, I had this temporarily happen once. Simultaneously, the infotainment rebooted.

I’ve seen this a couple times. Both times it quickly corrected itself and returned to normal.

I was not navigating, Android Auto was running previously. I hope VW knows about this! It's not debilitating, just concerning...

Because the binnacle pulls the light/dark setting from the infotainment, when the infotainment is not available because it is rebooting or the like, the binnacle reverts to the default setting which is apparently the light setting. Why it doesn’t use the setting it last got from the infotainment I don’t know.

Once the infotainment can be contacted again, it will fetch the setting and use it.

I noticed this same behavior when I had to force reboot the infotainment a while back after it refused to recognize my phone. In the OP’s photo and description, it does seem like the Infotainment system had crashed and was rebooting.
