Do you see the same issue with any Apple apps? If not, I would say it's likely to be a problem with how those non-Apple apps integrate with CarPlay on the iPhone. I'd be surprised if it was in an issue with the car because the car is just mirroring data the iPhone is feeding it. I would try the following things:

1. Restart the iPhone.
2. "Forget" the car in the phone's CarPlay settings (Settings > General > CarPlay) and then re-add the phone to the car's wireless CarPlay (hold down the Voice button on the steering wheel to get things started).
3. Delete the apps from your phone and reinstall them.
4. Reset network settings on the iPhone.

I would've also said to try a different USB cable, but you already said it's also an issue with wireless CarPlay.
