The ID.4 Owner's Manual is not very good compared to others I have had, but it should still be your first resource. The 2nd would be the excellent VW online tutorials.

All the way to the left, left of the steering wheel, but right of your mirror controls there should be a few icons on the panel. There are two icons that look like a defroster, one sets it to max, the other will turn on the back window defroster.
I have an FE so I'm not entirely sure whether it's different on the pro/pro-s models.
