Do the back seats fold flat? I see photos that they do, and some that they don't. If not, approximately what angle is the slant?
There is a double floor, keep it and then its flat till the foldedrearseats, otherwise it drops 10 cm [11 cm if you remove the floor]. and for the angle, try the picture here below

Alas not, but then I haven't had completely fold flat rear seats since my 90's Jeep Cherokee. The tradeoff on that Jeep was of course very thin seat back/bottom cushions that were then acceptable for that marque but not so for a modern more family oriented CUV/SUV. No free lunch in that design compromise unfortunately, and all design is compromise.
Typical angle for most SUV's.
My Audi TTS does have rear fold-flat seats (very thin cushions) but no adults can reasonably fit back there anyway. :p

The 2nd and 3rd row of seats in my 2018 Atlas both fold completely flat with each row of seat bottoms sliding forward and downward to accommodate the seatbacks tucking on top and ending up completely flat from back of driver's seat to the back gate.
So, it is possible in VW's world to engineer that arrangement. I like the design very much and am regularly thankful when I need to put more in the car than I planned by moving stuff around easily.

Volvo also manages it with the XC40. I believe the Mach-e is also very close to totally flat.
 
So the stated height of VW ID.4 is 64.4" (not including roof rails). I'm guessing that's with 19" wheels.
With 20" wheels is the height 65.4"? 66.4"?
Can anyone with 20" wheels confirm/clarify this?

You can check the full Tech Specs to confirm.

Edit: I think that's the overall height, too, not just to the top of the roof. The French specs give a height of 1,631 mm (64.2") to the top of the roof, and this diagram from the New Model Overview on the NHTSA site shows just 63.5" to the top of the antenna:

The main point, though, is that is doesn't matter which wheels you have. The outside diameter of the tires is going to be the same: 29".
